These are ridiculously tasty considering the healthy ingredients. They are great as an appetiser but if you double the recipe they can be a filling main meal if you feel the need for a healthy fry-up.
2/3 cup frozen peas, blanched
1 400g can of chickpeas, rinsed and drained
2 tablespoons chopped chives
1 clove garlic, crushed
1 teaspoon finely grated lemon rind
1 teaspoon baking powder
2 tablespoons plain flour
Vegetable oil for shallow frying
Your choice of dipping sauce – Thai sweet chilli goes well.
In a food processor, mix the peas, chickpeas, chives, garlic, lemon rind, baking powder and flour until smooth. Use damp hands to roll tablespoons of the mixture into balls then flatten into patties.
Heat 1cm of vegetable oil in a large pan over high heat. Cook the fritters in batches for 2 mins each side or until golden. Drain on paper towels and serve with your choice of sauce.
